Egg Quality and Difference

Find out virtually everything there is to know about eggs! Whether it is egg safety, nutritional information or egg trivia. Omega divide egg into 2 grades: Grade A and Grade C. Omega’s egg are different from other eggs only because of shell color and size but no difference in quality. Right now we are only producing eggs with A grade in some famous restaurant, shopping mall, clubs, hotels, rest houses. On the other hand, we supply our C grade eggs in local market.

The difference between Grade A and Grade C are given below:

Break Out Appearance
Covers a wide and special area.

Albumen Appearance
White is thick and stands high chalaza prominent.
Small amount of thick white; chalaza small or absent.
Yolk Appearance
Yolk is firm, round and high.
Yolk is somewhat flattened and enlarged.
Shell Appearance
Approximates usual shape; generally clean,* unbroken; ridges/rough spots that do not affect the shell strength are permitted.
Abnormal shape; some slight stained areas permitted; unbroken; pronoYolk is somewhat flattened and enlarged.unced ridges/thin spots permitted.
Usage
Ideal for any use, but are especially desirable for poaching, frying and cooking in shell.
Good for scrambling, baking, and as an ingredient in other foods.
